Raise high the roof beam, carpenters: Fred the Butcher, based in Halfmoon, has bought the former Falvo’s Meat Market on Route 85A in New Scotland and is renovating. Joseph Robilotto, who is now 80, started working for Sam Falvo in the 1980s and bought the shop in 1991, putting it up for sale two years ago. Fred Buonanno founded a butcher shop in 1979; he died in 2011 and the business, which bears his name, is carried on by his sons, according to Fred the Butcher’s website.
