‘Game-changer’: City mushroom farm moves to the country
NEW SCOTLAND — Collar City Mushrooms has moved from Troy to Indian Ladder Farms.
It will sell mushrooms at the Farm Store, which is to reopen on March 15 after being closed because of a fire last September.
“This partnership with Indian Ladder Farms is the perfect next step for Collar City Mushrooms,” said Avery Stempel, owner of Collar City Mushrooms, in a release from Indian Ladder Farms.
“Indian Ladder Farms’ dedication to education and sustainability mirrors our own goals,” he went on, “especially as we work with local schools and community organizations to teach the benefits and wonders of mushrooms. Having the opportunity to forage and grow in an environment like this is a game-changer for us.”
The Collar city website gives this philosophical overview on the importance of mushrooms:
“The fungi kingdom includes life forms that can offer nutrients, that include healthful medicinal properties, that can mycoremediate petroleum based wastes, that enrich and renew soils, that can induce mind altering spiritual growth, and that can be used as building materials, textiles, and biodegradable packaging.
“Understanding the mushroom and the way it interacts with its environment will help us save ourselves and the way we live.”
Indian Ladder Farms, on Route 156 in New Scotland at the base of the Helderberg escarpment, has been in the Ten Eyck family for more than a century. It started as a dairy farm, switched to growing apples, and now is a mecca for visitors.
“This partnership not only expands the educational opportunities we can offer but also introduces a unique and sustainable product to our farm store,” said Laura Ten Eyck, manager of Indian Ladder Farms, in the release. “Together, we can create a richer experience for the community while promoting local agriculture.”
“We have been working with Avery and the Collar City team for years, having collaborated on a number of beers and ciders,” said Dietrich Gehring, Ten Eyck’s husband and co-owner ofIndian Ladder Farms Cidery & Brewery, in the release. “We look forward to exploring more opportunities, now having their homebase so close to ours.”
